Healthy Almond & Cinnamon Christmas Stars

Take Christmas to the kitchen with some healthy treats! Make them as a homemade gift for friends and family or even as a tasty treat to finish off your Christmas lunch - these cinnamon stars are the perfect addition to your Christmas festivities.

 

Makes: 30 cookies

Ingredients:

1 ¾ cups of freshly ground almonds (250g) OR 1 ¾ cups of almond flour

¾ cup of coconut sugar (100g)

1 tablespoon of ground chai seeds

2 tablespoons of cold water

2 tablespoons of maple syrup OR 2 tablespoons of brown rice syrup

3 teaspoons of ground cinnamon

A pinch of vanilla powder

Icing sugar for decoration

Method:

  1. Pre-heat the oven to 160C
  2. Grind the almonds until they become a flour
  3. Place the ground chai seeds and water into a bowl. Whisk together and set aside to thicken for 10 minutes
  4. Place the coconut sugar, ground almonds, cinnamon and vanilla powder into a food processor. Mix until just combined.
  5. Add the chai-mix and maple syrup to the food processer and combine until a sticky dough forms. If the dough is crumbly, add a teaspoon of cold water to the mixture.
  6. Roll the dough out between pieces of baking paper, making it around 5mm thick.
  7. Using star shaped cutters, cut about 30 stars
  8. Place the cinnamon stars on a baking tray lined with baking paper and bake for 8-10 minutes until golden brown.
  9. Remove from the oven and leave to cook for 10 minutes
  10. Place icing sugar in a sifter and lightly cover cookies
  11. Enjoy!
  12. Note: Keep in an air tight container at room temperature [will keep for two weeks max]
