Sweet potato would have to be second on my list of top five favourite foods (with number one being avocado)! I could eat these 2 foods every day and practically do.

My favourite way of cooking sweet potato is to bake them with spices and then to serve with an avocado smash - this is also super easy and great for when you are low on time. This dish is a household special and I always make sure to bake a large batch as leftovers are great for an afternoon snack or thrown into a salad for lunch with some quinoa and other nutritional goodies like avocado, grated carrot and boiled egg.

Not only does this recipe taste super delicious but sweet potatoes are also amazingly good for you and provide huge health benefits - they are high in anti-oxidants, beta-carotene, and great for controlling and stabilising your blood sugar levels.

*The below quantities are per 1 large sweet potato

  • 1 large sweet potato
  • 1 1/2 teaspoon ground cinnamon*
  • 2 teaspoons smoked paprika*
  • salt
  • olive oil

*Katia's tip: Herbie's Spices would have to be one of the best spice ranges out on the market - I use their Paprika Smoked - Sweet and Cinnamon for this recipe, but their Mexican Spice Blend also works exceptionally well on these wedges. When using the Mexican Spice Blend I still use ground cinnamon but replace the smoked paprika for the Mexican spice blend (as this blend has a bit of paprika in it). You can find Herbie's Spices at health food stores and gourmet supermarkets such as Thomas Dux.

For the avocado smash:

  • 1 large ripe avocado
  • 1/2 small clove minced garlic - Don't use too much as it can be overpowering! You can also leave out if you don't like the flavour
  • 1/2 long red chilli - seeded and diced (If you don't have fresh chillies a sprinkle of chilli flakes works well)
  • Juice of 1/2 lime - you may need the whole lime depending how juicy it is (Lemon will also work well but you only need the juice of 1/4 lemon)
  • 1/4 bunch fresh dill roughly chopped
  • Salt

Sweet potato wedges:

  1. Preheat oven to 190-200 deg C.
  2. Wash the sweet potato and dry off - you need to do this as you will not be peeling it.
  3. Cut the sweet potato into thick / chunky wedges and place into a baking tray.
  4. Cover them with a generous amount of olive oil and salt and sprinkle on the cinnamon and smoked paprika.
  5. Mix together well - its a good idea to use your hands for this!
  6. Bake for around 45 minutes (but check on them at the 35 min mark). Give them a toss half way through cooking to make sure you get a even colour on all sides.

Avocado smash:

  1. Place the avocado into a medium sized bowl and mash with a fork.
  2. Add all remaining ingredients and mix through.
  3. Season to taste with sea salt.
