Marinated Kale Salad | Deliciously Ella

Ella's blog is an all time favourite at Nimble HQ - in particular we find ourselves making her marinated kale salad over and over again.

A great thing about this salad is that, unlike rocket salads which get soggy and unappetising very quickly, this one keeps really well. This salad is a great one to make up the night before and take into work the next day for a healthy lunch option - for a more substantial meal, you can also team it with some cooked quinoa, roasted pumpkin or sweet potato and a boiled egg.

*Please note: the below recipe is based on Ella's marinated kale salad but has been altered slightly to how we like to make it at Nimble HQ. Enjoy!

INGREDIENTS:

Serves 3 - 4

For the salad

  • 3/4 to 1 bunch of kale
  • 1 ripe avocado
  • a handful of pumpkin seeds (toasted)
  • 1/3 of a cup of pomegranate seeds

Nimble tip: If you don't have any pomegranate seeds you can leave these out - the salad still works exceptionally well without them. Feel free to add in any other nuts or seeds that take your fancy - we love also adding chopped toasted almonds. 

For the dressing

  • 2 tablespoon of olive oil
  • 1 tablespoon of tahini
  • 1 tablespoon of raw honey
  • 2 teaspoons of apple cider vinegar or 1 lime
  • 1 tablespoon of tamari
  • 1 lime (you can also use lemon juice if you don't have any limes -  the juice of 1/2 lemon will be enough)

METHOD: 

  1. Start by washing the kale and drain well to remove excess water.
  2. Tear small pieces of the kale off the stems, discarding the stems and placing the leaves into a bowl.
  3. Drizzle all the dressing ingredients onto the kale. Then use your hands to firmly massage the dressing into the leaves. As you do this you’ll feel the leaves soften and wilt. Keep massaging them for a few minutes to make sure they are really soft.
  4. Stir in the pomegranate seeds and avocado cubes.
  5. Sprinkle the toasted pumpkin seeds on the top (or any other nuts or seeds that take your fancy).

Nimble tip: Make sure you use your hands to massage in the salad dressing as this helps to break down the kale.
