Quinoa & Buckwheat Granola

With one of our co-founders, Katia, having an intolerance to wheat, over the next few weeks we will be sharing four of her favorite ways to use the ever so popular “ït” grain, quinoa (well okay, it’s technically a seed). This tiny nutritional superfood is loaded with protein and is also gluten free, making it a great substitute for other grains.

Quinoa comes in many colours with white, red and black being the most commonly cultivated. Depending on which colour you use, there will be a slight difference in cooking times and chewiness: white quinoa is the least crunchy and cooks the quickest, while on the other end black quinoa will need a bit longer to cook and also has a crunchier texture which makes it great for salads.

INGREDIENTS:

  • 1 cup white quinoa, rinsed & drained well
  • 1 cup activated buckwheat (buckinis)
  • ¼ cup sunflower seeds
  • ¼ cup pumpkin seeds (pepitas)
  • ½ cup raw almond kernels, chopped roughly
  • 1 tsp ground cinnamon
  • Pinch of sea salt
  • 4 tbsp coconut oil
  • 4 tbsp honey
  • ½ cup goji berries

Optional ingredients:

  • 2 tbsp raw cacao powder (mix this through granola mixture before baking). Did not use this in the image shown.
  • You could also add currants, sultanas or any other nuts or seeds that take your fancy.

METHOD:

  1. Place rinsed quinoa, buckwheat, seeds, nuts, cinnamon & salt in a large baking dish.
  2. Heat coconut oil & honey in a mug in the microwave for 20-30 seconds or until melted.
  3. Pour over granola mixture and give it a good stir.
  4. Bake in a 170deg oven for 20 minutes.
  5. Take granola mixture out of the oven, give it a good mix and then place back into oven. Turn oven down to 120deg and place a wooden spoon at the door to keep it slightly ajar. This will help the moisture evaporate out of the mixture.
  6. Bake for another 45 minutes, giving it a stir every 20 to 25 minutes.
  7. The mixture can still be a little wet when it comes out of the oven but will crunch up once it cools down.
  8. Once cool, stir through the goji berries and any other dried fruits etc that you have chosen.
  9. Keep in an airtight container or jar.
  10. Enjoy :)
